2 cups sugar
1 cup buttermilk
1/2 cup margarine
1 tablespoon corn syrup
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 cup chopped walnuts
Butter the sides of dutch oven, then combine sugar, buttermilk, margarine, corn syrup, and baking soda. Cook over medium-low heat while stirring constantly until margarine melts and the sugar dissolves. Be sure to wash down the sugar from the side of the pan/oven.
Bring to a boil but do not stir while syrup is boiling. Keep cooking until the syrup reaches a soft ball-like stage. Remove from heat and add vanilla. Do not stir until syrup cools to approximately 200 degrees.
With a ‘medium’ speed, beat fudge till thickened and no longer glossy. Stir in walnuts. Pour mixture into a buttered 8 x 8 inch pan. Let it cool completely. Cut into squares and store in an airtight container.
