1 pound bacon
2 medium diced onions
1 1/2 cups of sliced mushrooms
1 diced green bell pepper
3 minced garlic cloves
10-12 sliced medium sized potatoes
12 beaten eggs
salt and pepper (optional)
3 cups of grated cheddar cheese

Heat your dutch oven until hot. Cut the bacon into 1 inch slices and add to the dutch oven and fry until brown. Add in the onion, mushrooms, bell pepper and then saute until the onions are translucent. Add in the potatoes and season with salt and pepper. Cover and bake for about 30 minutes. Season eggs with salt and pepper pouring over the top of the potatoes. Cover and bake another 20 minutes. Stir gently every 5 minutes. When eggs are done, cover them with cheese and replace the lid. Let stand until cheese is melted.
